Moroccan roast veggies with herbed rice and smoked hummus

Ingredients

  • Ras el Hanout Spice
  • Olive oil
  • Selection of veggies such as red onion, cauliflower, broccoli, courgette, sweet potato, sprouts, Parsley chopped
  • Mint chopped
  • Basmati rice

Method

  1. Spread the chopped veggies onto a large baking tray.
  2. Sprinkle with the ras el hanout and drizzle with olive oil.
  3. Pop them in the oven at 180 and roast until they are coked through and have some nice brown charred bits on!
  4. Mix a handful fresh parsley and mint through your cooked basmati rice and serve with a big dollop of hummus. My favourite is Moorish Smoked hummus.
