Spinach pesto

I use this in pasta dishes, drizzled into soups, stirred into hummus or spread onto homemade pizzas. Try adding lemon juice, cooked split peas or different types of nuts as an alternative to cashews.


  • Bunch of basil leaves
  • Handful of spinach leaves
  • 25g cashews (unroasted)
  • 1 garlic clove
  • black pepper
  • 4 tbsp olive oil
  • Handful of parmesan/vegan parmesan or nutritional yeast flakes


  1. Whiz all the ingredients up in a blender adding a little water if the mixture is too dry.
